What makes a good mocktail

A mocktail contains no alcohol, but it follows the same rules as any good mixed drink: balance of sweet and sour, a clear main flavour, pleasant texture and the right temperature. The challenge is that alcohol normally adds body, warmth and a slight bitterness. A good alcohol-free recipe replaces those qualities with other ingredients.

Building flavour without alcohol

Typical ratios

Many mocktails follow the sour template: 30 ml fresh citrus, 20 to 25 ml syrup and a lengthener such as 100 ml soda or ginger beer. Shaken versions without soda need a flavourful base, for example 60 ml of a strong tea, fruit juice or shrub instead of the spirit.

A note on non-alcoholic spirits

Alcohol-free gin and aperitif alternatives are widely available. Some are excellent, others taste thin when mixed. Taste them neat first and use them in recipes where they have strong partners. Always check labels if a drink must be completely free of alcohol, as some products contain up to 0.5 percent.

Serving tips

Serve mocktails in the same glasses as cocktails, with the same garnish and ice. Presentation matters as much as for any drink on the menu.
