Method
Put the lime pieces and sugar in a double rocks glass.
Muddle firmly for about 15 seconds until the sugar is mostly dissolved in the juice.
Fill the glass with crushed ice.
Top with ginger ale and stir from the bottom up with a bar spoon.
Garnish with a lime wheel and a sprig of mint, and serve with a straw.

History and origin
The Virgin Caipirinha is an alcohol-free take on Brazil's national cocktail, in which lime and sugar are muddled and mixed with cachaça over ice. The word virgin in a drink name simply means that the spirit has been left out, a convention bars have used for decades, as in the Virgin Mary or Virgin Colada.
There is no fixed recipe. Some bars top the muddled lime with soda water, others with lemon-lime soda, and many with ginger ale, as in this version, which gives more body and a light ginger warmth to replace the character of the missing spirit. Because it is quick and uses ingredients that most bars always have, it has become a common alcohol-free option on German cocktail menus.
Bartender tips
Cut the white core out of the lime: it only adds bitterness.
Muddle before adding ice, otherwise the sugar will not dissolve and stays gritty at the bottom.
For a drier drink, use half ginger ale and half soda water.
