Method

  1. Add orange juice, grapefruit juice, lemon juice and simple syrup to a shaker.
  2. Fill with ice and shake for about 10 seconds.
  3. Strain into a highball glass over fresh ice cubes.
  4. Top with a little soda water and stir gently once.
  5. Garnish with an orange slice and a lemon wheel.

History and origin

The Florida is named after the American state famous for its oranges and grapefruit, and the name says what matters: citrus. It is one of the long-standing alcohol-free drinks of the classic bar repertoire and has been printed in bar books for decades, especially in Germany, where it is a standard on menus next to the San Francisco and the Coconut Kiss.

There is no known creator. Older recipes sometimes add a few dashes of Angostura bitters, which contain alcohol, so modern alcohol-free versions leave them out. What remains is a straightforward citrus sour, lengthened with soda water.

Bartender tips

  • Freshly squeezed juice makes the biggest difference here, because citrus is all there is.
  • Adjust the syrup to your fruit: sweet oranges may need none at all.
  • Pink grapefruit gives a softer, rounder taste than white.

Variations

Florida with bitters
Older bar recipes add 2 dashes of Angostura bitters. This adds a trace of alcohol, so it is no longer strictly alcohol-free.
