Method

  1. Fill a highball glass with ice cubes.
  2. Pour in the cold tonic water, leaving room at the top.
  3. Pull a fresh espresso shot.
  4. Pour the espresso slowly over the back of a bar spoon onto the tonic so it floats and drifts down in layers.
  5. Express an orange peel over the glass and serve with a stirrer.

History and origin

The Espresso Tonic is a product of the specialty coffee scene rather than the bar world. A widely repeated account credits the Swedish roastery and café Koppi in Helsingborg with serving it in the late 2000s, and from Scandinavia it spread to coffee shops across Europe, North America and Asia during the 2010s.

Its success has a simple reason: light-roasted espressos with fruity, acidic notes pair very well with the bitterness and carbonation of tonic water. The drink is served like a highball, built over ice, and has become a standard summer item on many café menus.

Bartender tips

  • Fruity, lightly roasted espresso works much better than dark Italian roasts, which turn harsh and ashy with tonic.
  • Pour the espresso slowly: hot coffee on cold tonic foams up strongly if you pour too fast.
  • Choose a tonic with moderate sweetness. Very dry tonics may need the optional 5 ml syrup.

Variations

Espresso Orange Tonic (twist)
Add 30 ml fresh orange juice to the tonic before floating the espresso.
Cold Brew Tonic
Replace the espresso with 50 ml cold brew concentrate for a softer, less acidic drink.
