Virgin Bellini

Ripe white peach has a floral, almost honeyed scent that yellow peaches lack, and that is the heart of this drink. Topped with cold, dry bubbles it turns into a soft, pale apricot fizz that tastes of late summer.

Method

  1. Chill the flute, the peach purée and the sparkling wine well.
  2. Pour the peach purée and lemon juice into the flute.
  3. Add a small splash of the sparkling wine and stir gently to loosen the purée.
  4. Top slowly with the rest of the sparkling wine, tilting the glass so it does not foam over.
  5. Give one last gentle lift with a bar spoon and garnish with a thin peach slice if you like.

History and origin

The Bellini comes from Harry's Bar in Venice, where Giuseppe Cipriani mixed white peach purée with Prosecco. The drink is usually dated to the 1940s and named after the Renaissance painter Giovanni Bellini, whose use of soft pink tones reminded Cipriani of the colour in the glass. It was a seasonal drink, made only when white peaches were available.

The alcohol-free version simply swaps the Prosecco for an alcohol-free sparkling wine or, in simpler bars, for sparkling water with a little lemonade. The quality of the peach purée matters even more here, because there is no wine to carry the aroma.

Bartender tips

  • For homemade purée, blend peeled ripe white peaches with a few drops of lemon juice and pass it through a fine sieve.
  • Choose a dry alcohol-free sparkling wine; sweet ones make the drink cloying because the peach already brings sugar.
  • Out of season, a good frozen or bottled white peach purée works better than canned peaches.
