Cucumber tastes of cold water and green garden, and that is exactly what this drink delivers. Mint and lime give it lift, soda makes it long, and the whole glass smells like a summer salad in the best sense.

Cucumber Cooler
Taste
Green and cooling: juicy cucumber, fresh mint and bright lime with a light sweetness and lively bubbles.
History and origin
Coolers are an old family of long drinks: a base, something sweet, sometimes citrus, topped with soda or ginger ale and served over plenty of ice. The name has been used for many different drinks since the late 19th century, with and without alcohol.
The Cucumber Cooler has no known inventor. It belongs to the fresh, herb-driven mocktails that became common on bar and restaurant menus in recent years, following the popularity of cucumber in drinks like the Pimm's Cup, the Eastside or gin and tonic with cucumber. The recipe here uses the same technique as a Mojito: muddle, shake and lengthen.
Bartender tips
Press the mint, do not shred it: bruised leaves release oil, shredded leaves turn bitter.
English or Dutch cucumbers with thin skin need no peeling and give a brighter green.
For a party, blend cucumber with lime and syrup, strain the juice and keep it cold. Pour over ice and top with soda per glass.
Variations
Cucumber Tonic (twist)
Use tonic water instead of soda for a drier, slightly bitter drink.
Cucumber Elderflower Cooler (twist)
Replace the simple syrup with elderflower syrup.
Frequently asked questions
Is the Cucumber Cooler alcohol-free?
Yes. It contains cucumber, mint, lime, syrup and soda water only.
Do I need to peel the cucumber?
Not if the skin is thin. With thick or waxed skin, peel it partly to avoid bitterness.
Can I make it without a shaker?
Yes. Muddle in the glass, add lime, syrup and ice, stir well and top with soda.
