Method
Rub a lime wedge around half of the rim of a highball glass and dip it into salt.
Fill the glass with ice cubes.
Add grapefruit juice, lime juice, agave syrup and a pinch of salt and stir briefly.
Top with soda water, stir once more and garnish with a grapefruit wedge.

History and origin
In Mexico the Paloma is arguably more popular than the Margarita: tequila, a squeeze of lime and grapefruit soda, often served with salt. Its exact origin is not documented. The name means dove in Spanish, and the drink spread with grapefruit sodas that became common in Mexico in the second half of the 20th century.
The virgin version keeps everything that makes the Paloma so refreshing, the bitter citrus, the lime and the salt, and simply leaves out the spirit. Using fresh grapefruit juice with soda water instead of a ready-made soda lets you control the sweetness yourself.

A pinch of salt inside the drink, not just on the rim, softens the bitterness of the grapefruit.
