Method

  1. Wash the spinach and mint thoroughly and pick the mint leaves.
  2. Put spinach, mint and cold milk into the blender.
  3. Blend for about 45 seconds until completely smooth.
  4. Taste, sweeten if you like, and serve.

About this smoothie

This is one of the simplest green smoothies: leaves, herbs and milk. Baby spinach is much milder than mature spinach and blends easily; it provides folate and vitamin K. Milk adds creaminess, protein and calcium, and fresh mint gives the drink its aroma.

Because there is no fruit, the smoothie is hardly sweet. A teaspoon of honey or half a banana rounds it off if you prefer. A light option for breakfast or between meals.
