Lemon, Cucumber and Mint Smoothie

Think of it as a blended lemonade with a green heart. Cucumber and mint cool it down, lemon keeps it bright, and a little honey takes the edge off the acidity.

Lemon, Cucumber and Mint Smoothie

Taste

Cool, crisp and light, lemony and minty, with only a faint sweetness.

About this smoothie

Cucumber is mostly water and has a clean, fresh taste, which makes it a good base for light summer drinks. Fresh mint adds a cooling aroma, lemon juice a clear acidity, and baby spinach a mild green colour without much flavour.

The result is one of the lightest and least sweet smoothies in this collection, closer to a refreshing drink than to a breakfast. A teaspoon of honey balances the lemon. Serve it very cold on hot days, after sport or with a summer lunch.

Bartender tips

  • Chill the cucumber beforehand or add two ice cubes to the blender.
  • Only use the mint leaves: the stalks can taste bitter.

Variations

Lime version
Use lime juice instead of lemon for a more aromatic, slightly tropical taste.

Frequently asked questions

Do I have to peel the cucumber?

No, if it is organic just wash it. The skin adds colour.

Can I make it without spinach?

Yes, it will be lighter in colour and even fresher in taste.

Is it vegan?

Yes, if you sweeten with agave syrup instead of honey.
