  1. Wash the lamb's lettuce thoroughly and remove any roots.
  2. Put lamb's lettuce, pomegranate seeds and cold water in the blender.
  3. Blend for about 60 seconds until smooth.
  4. Strain through a sieve if you prefer it without seed bits, then serve.

Lamb's lettuce is one of the mildest salad greens, with a soft, nutty flavour that suits smoothies well. Blended with only water, the result is closer to a thin, refreshing green juice than a thick smoothie. It is very low in sugar and works best as a light drink between meals or with breakfast; add a banana if you want more body.
