About this smoothie

Stone fruit makes a juicy, naturally sweet smoothie with a pleasant acidity from the skins. Apricots bring a honeyed note, plums a darker, jammy one. Pomegranate seeds add tartness and a touch of colour.

No banana or dairy is used, so the smoothie is light and quite tangy. It suits a summer breakfast or a refreshing drink in the afternoon. Adjust the sweetness with a little honey if your fruit is not fully ripe.

Bartender tips

  • Very ripe fruit gives the best result and needs no sweetener.
  • Strain through a sieve if you dislike the small bits from pomegranate seeds.

Variations

Creamy
Add 2 tbsp natural yoghurt for a softer, creamier smoothie.
