About this smoothie

Leafy greens are the classic way to add vegetables to a smoothie, and they work best with sweet fruit. Here a red apple provides the sweetness, rocket adds a mustardy, peppery edge and lamb's lettuce contributes a soft, nutty taste. Leafy greens like these contain folate and vitamin K.

The smoothie is light and fresh, a good start to the day or a break in the afternoon. If you are new to green smoothies, start with less rocket and more lamb's lettuce, then adjust to your taste.

Bartender tips

  • Blending the leaves with the water first gives a smoother result without fibrous bits.
  • A little lemon juice balances the pepperiness and keeps the colour fresh.

Variations

Milder green
Replace the rocket with baby spinach for a softer, more neutral green smoothie.

Frequently asked questions

Is rocket too bitter for a smoothie?

Rocket is peppery rather than bitter, and the apple balances it. Start with 10 g if you are unsure.

Is this smoothie vegan?

Yes, it contains only fruit, leafy greens and water.

Can I use a green apple?

Yes, but the smoothie becomes tarter; a red apple makes it rounder.
