About this smoothie

Lamb's lettuce, also called corn salad, is a winter salad that is mild enough to blend without any bitterness. It contributes colour and, like most leafy greens, some vitamin C and folate. Pomegranate seeds add fruity tartness, while lemon juice sharpens the whole drink.

The original recipe used a lot of lemon; this version keeps half a lemon per glass so it stays pleasant, with a little honey as an option. A clean, tangy glass for a light lunch.

Bartender tips

  • Lamb's lettuce often holds sand: wash it in a bowl of water and lift it out rather than pouring it into a sieve.
  • Start with less lemon juice and add more after tasting.

Variations

Fruity version
Add half a pear or apple for more sweetness and body.

Frequently asked questions

Is it very sour?

It is tangy; the honey or a piece of pear balances it.

Can I use spinach instead of lamb's lettuce?

Yes, baby spinach works the same way and tastes similarly mild.

Is it vegan?

Without honey, or with maple syrup instead, yes.
