About this smoothie

Pineapple and banana are both grown across the tropics and appear together in countless smoothies and fruit salads. Banana brings body and sweetness, pineapple juiciness, acidity and vitamin C. Milk makes the drink creamy and adds protein. Cinnamon is an unusual addition here, but its warm spice works well with the tropical fruit.

The smoothie is good for breakfast or after exercise. Fresh pineapple contains the enzyme bromelain, which can make milk taste slightly bitter if the smoothie stands, so drink it soon after blending.

Bartender tips

  • Frozen pineapple chunks make the smoothie thick and frosty.
  • Canned pineapple does not contain active bromelain, so it keeps better with milk.

Variations

Coconut
Replace the milk with coconut milk drink and leave out the cinnamon for a tropical, piña colada style smoothie.

Frequently asked questions

Why does pineapple and milk turn bitter?

Fresh pineapple contains bromelain, an enzyme that breaks down milk protein over time. Drink it fresh.

Can I leave out the cinnamon?

Yes, the smoothie then tastes purely fruity.
