Stone fruit and a handful of lamb's lettuce make a smoothie that tastes of summer, not of salad. The orange fruit even hides most of the green colour.

Method

  1. Wash the lamb's lettuce thoroughly.
  2. Wash, halve and pit the nectarine and apricot; the skin can stay on.
  3. Blend everything with the cold water for about 45 seconds until smooth.
  4. Serve straight away.

Nectarines and apricots are at their best in summer, when they are soft, fragrant and sweet. Apricots are known for their beta carotene, which gives them their orange colour, and both fruits bring natural sugar and fibre. Lamb's lettuce adds a mild, nutty green note that blends in easily.

Because the stone fruit is so aromatic, this smoothie needs no sweetener. It works well as a light summer breakfast. Only use really ripe fruit, otherwise it turns sour.
