Lamb's Lettuce Smoothie with Nectarine and Chia Seeds

Chia seeds give this nectarine smoothie more body and make it more filling. If you let it stand for a few minutes, it becomes almost spoonable.

Method

  1. Wash the lamb's lettuce thoroughly.
  2. Wash, halve and pit the nectarines.
  3. Blend the lettuce, nectarines, chia seeds and water for about 60 seconds so the seeds break down.
  4. Serve immediately or let it rest for a few minutes to thicken.

Taste

Fruity and sweet with a slightly thick, smooth body and a soft nutty background.

About this smoothie

Chia seeds absorb liquid and form a gel, which is why smoothies with chia thicken as they stand. They are known for fibre and plant based omega 3 fatty acids. Ripe nectarines provide the fruit and sweetness, while lamb's lettuce adds a mild green note.

This makes the smoothie more substantial than a plain fruit smoothie, a good choice for breakfast. Drink it right away for a thin texture, or leave it for ten minutes for a thicker one.

Bartender tips

  • Add a little extra water if it gets too thick while standing.
  • Ground chia seeds blend smoother than whole ones.

Variations

Overnight style
Blend the smoothie in the evening, keep it covered in the fridge and eat it as a chia pudding in the morning.
