Banana Smoothie with Fresh Apricots

When apricots are in season, this is the smoothie to make. Their slight tartness meets a juicy nectarine and a soft banana, and the colour in the glass is a warm apricot orange.

Banana Smoothie with Fresh Apricots

Taste

Juicy and sweet, with apricot tartness, nectarine perfume and a smooth banana base.

About this smoothie

Apricots and nectarines are stone fruits with a short season in early and mid summer, and ripe ones smell sweet even through the skin. Both contain beta carotene, the pigment behind their orange colour. There is no need to peel them: the thin skins disappear in a good blender and add a little fibre. The banana gives body so you do not need yogurt or milk. It is a light, fruity glass for a hot morning or after a bike ride.

Bartender tips

  • Firm apricots taste sour; let them ripen a day or two at room temperature first.
  • Outside the season, use a peach or frozen apricot halves.

Variations

Apricot lassi style
Replace half the water with natural yogurt and add a pinch of cardamom.
