Pear Apricot Smoothie

In apricot season this is one of the easiest smoothies you can make. Pear and apricot taste of late summer, and a little lamb's lettuce adds greens without changing the flavour much.

Pear Apricot Smoothie

Taste

Fruity and gently sweet with honeyed apricot and juicy pear; a light, smooth texture and only a hint of green.

About this smoothie

Apricots are at their best from early to late summer. They have a delicate, honeyed sweetness with a gentle tartness near the skin and provide beta carotene, which the body converts into vitamin A. Here they meet a ripe pear, which adds juice and body, and a small amount of lamb's lettuce, whose mild, nutty flavour stays in the background. The colour ends up golden with a slight green tint. Water keeps the smoothie light, so it suits breakfast or a warm afternoon.

Bartender tips

  • Only really ripe, fragrant apricots give enough flavour; firm ones taste sour.
  • Outside the season, use unsweetened frozen apricots.

Variations

With baby spinach
Swap the lamb's lettuce for baby spinach; the taste stays mild.

Frequently asked questions

Is it vegan?

Yes. It contains only fruit, lettuce and water.

Do I have to peel the apricots?

No, the thin skin blends in completely.

Can I use dried apricots?

Yes, soak 3 or 4 dried apricots in the water for 15 minutes first; the smoothie becomes sweeter.
