Lamb's Lettuce Smoothie with Pears

Lamb's lettuce is one of the gentlest greens for smoothies, soft and slightly nutty. A ripe pear and half a nectarine make it sweet and juicy, so it tastes more of fruit than of salad.

About this smoothie

Lamb's lettuce, also called corn salad or mâche, is a small, tender winter salad popular in Germany and France. Its mild flavour makes it a good first green for anyone new to green smoothies.

Pear brings sweetness and a soft texture, and nectarine adds a fresh stone fruit note. Lamb's lettuce provides vitamin C and folate, and the fruit contributes fibre. A light smoothie for a mild breakfast or an afternoon break.

Bartender tips

  • Lamb's lettuce often holds sand between the leaves; wash it in a bowl of water two or three times.
  • Out of nectarine season, half a banana or a few frozen peach slices work well.

Variations

Creamy green
Add half a banana for a thicker, sweeter smoothie.
