About this smoothie
This is the most minimal smoothie in the collection. Kale brings a robust, slightly bitter, cabbage-like flavour, and baby spinach softens it with its mild, almost sweet leaves. Both are leafy greens that are commonly eaten for vitamin K and folate.
Without any fruit the result is lean and savoury, which some people love and others find hard going. That is why half an apple and a little lemon juice are suggested as optional extras. Drink it fresh, ideally alongside a meal.

Young, tender kale leaves are much milder than large winter leaves.
A high speed blender breaks down kale best; otherwise strain the smoothie through a sieve.
