This is a green smoothie for people who do not want fruit sugar in their glass. Three kinds of leaves and half an avocado make a creamy drink that tastes more like a cold soup than a dessert.

Spinach Smoothie with Avocado and Parsley
Taste
Creamy and savoury, grassy and herbal, with a clean lemon note if you add it.
About this smoothie
The original recipe contains no fruit at all: spinach, lettuce and parsley provide the green flavour, and avocado turns the leaves into a creamy, rounded drink. Leafy greens are commonly eaten for their folate and vitamin K, and parsley adds a fresh, slightly peppery herb note.
Because it is savoury, a squeeze of lemon helps a lot. If it tastes too green for you, add half an apple. It goes well with a light lunch or as a savoury snack.
Bartender tips
A tiny pinch of salt makes the savoury version taste rounder.
Parsley stalks carry a lot of flavour; the thin ones can go into the blender too.
Variations
Cucumber version
Add 80 g cucumber for a lighter, more refreshing drink.
Frequently asked questions
Does this smoothie contain fruit?
Only the avocado and, if you like, half an apple. The base recipe is fruit sugar free.
Can I use curly parsley?
Yes, but flat-leaf parsley is softer and blends more smoothly.
