About this smoothie

Kale is a hardy leafy cabbage, traditionally a winter vegetable in northern Europe. Raw, its flavour is strong and slightly bitter, so it pairs well with a creamy, mild partner such as avocado. Kale provides vitamin C and vitamin K, avocado mostly monounsaturated fat and a smooth texture.

The original recipe used a whole avocado per glass; half is enough for creaminess and keeps the drink lighter. Lemon brightens it, and half an apple can be added for sweetness. For fans of green, savoury drinks.

Bartender tips

  • Young, tender kale leaves are milder and blend more easily.
  • Massage or briefly freeze kale leaves to soften their bitterness.

Variations

Fruity green
Add half a banana and a few pineapple chunks for a sweeter version.
