Kale and Pineapple Smoothie with Chia Seeds

Pineapple is the ideal partner for kale: its sweetness and acidity cut through the strong, cabbage like taste. Avocado makes the whole thing creamy.

About this smoothie

Kale is one of the most robust leafy greens and has a pronounced flavour, so it needs a strong fruit to balance it. Fresh pineapple brings plenty of sweetness and acidity. Kale contains vitamin K and vitamin C, and chia seeds add fibre while slightly thickening the drink.

Half an avocado gives the smoothie a soft, creamy body. It is filling enough for breakfast. Remove the tough stems from the kale, they do not blend well.

Bartender tips

  • Young kale or cavolo nero tastes milder than mature curly kale.
  • Freeze the pineapple chunks for a colder, thicker smoothie.

Variations

Spinach instead of kale
Use 30 g baby spinach for a milder smoothie.
