  3. Rinse the spinach.
  4. Blend everything with the water for about 45 seconds, taste, sweeten if needed and serve right away.

Taste

Mild, honeyed fig sweetness with a buttery, very smooth texture and a light green note.

About this smoothie

This is one of the quieter smoothies: no citrus, no tropical fruit, just the honeyed sweetness of ripe figs against the buttery texture of avocado. Both ingredients bring fibre, and the avocado adds mainly unsaturated fat, which makes the drink filling.

Baby spinach barely changes the taste but adds colour. Because there is only water as liquid, the flavour depends entirely on how ripe the figs are. In late summer, when figs are at their best, it makes a calm, satisfying breakfast.

Bartender tips

  • A squeeze of lemon juice lifts the flavour and keeps the colour fresh.
  • Figs that are not quite ripe taste bland; wait until they are soft to the touch.

Variations

With ginger
Add a thin slice of fresh ginger for a warm, spicy note.

Frequently asked questions

Is this smoothie vegan?

Yes, if you sweeten with agave syrup or not at all.

Can I use dried figs?

Yes, soak 2 or 3 dried figs in hot water first and add a little more water.

Can I prepare it ahead?

It is best fresh, because avocado darkens after a few hours.
