Method

  1. Wash the baby spinach and drain it.
  2. Halve the avocado, remove the stone and scoop out the flesh.
  3. Blend spinach, avocado, honey and water for about 40 seconds.
  4. Pour into a glass and serve cold.

Taste

Velvety and mild, grassy green with a faint honey sweetness.

About this smoothie

Baby spinach is much milder than mature spinach and almost disappears in a smoothie, while avocado supplies a creamy texture and mostly unsaturated fats. Spinach contains vitamin K and folate. Without any fruit apart from the avocado, this drink is only lightly sweet.

It works well as a light lunch companion or a mid morning glass. For more sweetness, blend in half a banana or a few pieces of pear.

  • A squeeze of lime juice brightens the flavour considerably.
  • Add two or three ice cubes; the drink tastes much fresher very cold.
