Avocado Spinach Smoothie with Blueberries

The avocado turns this smoothie velvety without any dairy, and the blueberries give it a deep purple colour that hides the spinach completely.

About this smoothie

Avocado is a popular smoothie base because its soft flesh creates a creamy texture and contains mostly unsaturated fat. Blueberries supply colour, fruity acidity and a mild sweetness, and baby spinach adds green without much flavour. Since neither avocado nor spinach is sweet, the result is only lightly fruity; a teaspoon of honey helps if you prefer it sweeter. It makes a satisfying breakfast.

Bartender tips

  • Frozen blueberries make the smoothie colder and even thicker.
  • Brush the cut surface of the remaining avocado half with lemon juice and wrap it tightly to slow browning.

Variations

With banana
Add half a banana for more sweetness and an even creamier body.

Frequently asked questions

Can I use frozen blueberries?

Yes, they work very well. Add a little more water if the blender struggles.

Is it vegan?

Yes, if you use agave syrup instead of honey or leave out the sweetener.

How do I know the avocado is ripe?

It gives slightly under gentle pressure. Hard avocados blend poorly and taste grassy.
