Avocado Smoothie with Passion Fruit

Passion fruit is small but very aromatic, and one fruit is enough to flavour the whole glass. Avocado makes it creamy, spinach adds colour.

Method

  1. Wash the spinach thoroughly and drain it.
  2. Halve the avocado, remove the stone and scoop out the flesh.
  3. Halve the passion fruit and scoop out the pulp.
  4. Blend everything with the water for about 45 seconds, sweeten if needed and serve.

Passion fruit pulp is intensely fragrant and quite tart, which makes it a good partner for mild, creamy avocado. The small black seeds are edible and give a slight crunch; strain them out if you prefer a smooth drink. Baby spinach adds green colour with almost no flavour.

Passion fruit is known to contain vitamin C and fibre. Because the smoothie contains little sugar, you may want a spoon of honey. It fits breakfast or a light lunch.
