Method

  1. Wash the figs, cut off the stems and chop them roughly.
  2. Halve the avocado, remove the stone and scoop out the flesh.
  3. Wash the spinach and peel the ginger.
  4. Blend everything with water and honey for about 45 seconds until very smooth.

Taste

Thick, velvety and mildly sweet, with jammy fig and a warm ginger finish.

Fresh figs are available mainly in late summer and early autumn, and their jammy, honeyed flesh blends beautifully. Avocado adds body and a buttery texture and is known for its monounsaturated fat. A little baby spinach brings colour without much taste, while fresh ginger gives a gentle heat.
