Baby Spinach, Ginger and Passion Fruit Smoothie

Passion fruit has one of the most intense aromas of any fruit, and a single one is enough to perfume the whole glass. Ginger adds warmth, apple the juicy base, spinach the colour.

Baby Spinach, Ginger and Passion Fruit Smoothie

Taste

Aromatic and tangy, with intense passion fruit, juicy apple and a warming ginger finish.

About this smoothie

Passion fruit pulp is tart and heavily fragrant, with a tropical scent that carries through almost anything. In this smoothie it meets a sweet red apple, which balances the acidity, and fresh ginger, which adds a pleasant heat at the back of the throat.

Baby spinach adds folate and vitamin K and a fresh green colour without much flavour of its own. The crunchy passion fruit seeds are edible and add a little texture. It is a lively, awakening drink for the morning.

Bartender tips

  • Ripe passion fruit has wrinkled skin and feels heavy for its size.
  • Start with a thin slice of ginger; it gets stronger the longer you blend.

Variations

Mango passion
Add 80 g of mango for a sweeter, thicker and more tropical version.
