Baby Spinach and Ginger Smoothie

This is a green smoothie in its purest form: just leaves, ginger and water. The ginger gives it a warming kick that makes the mild spinach and nutty lamb's lettuce come alive.

  4. Serve very cold.

Taste

Green and savoury, with nutty leaves and a clear, warming ginger heat.

About this smoothie

Baby spinach and lamb's lettuce are both tender, mild salad leaves. Lamb's lettuce has a slightly nutty flavour, and spinach is a good source of vitamin K and folate. Fresh ginger, used in kitchens around the world for its heat, gives the drink its character.

Without fruit, this smoothie is barely sweet and quite savoury. A little lemon juice and honey make it more approachable. It works best as a small, refreshing glass rather than a filling breakfast.

Bartender tips

  • Rinse the lamb's lettuce in several changes of water to remove grit.
  • Blend a few ice cubes in; savoury green smoothies taste best ice cold.

Variations

With apple
Add half a green apple for sweetness and body.
