About this smoothie

The old recipe carried spinach in its name but forgot it in the ingredient list, so here it is back: 30 g of baby spinach, the mildest of the leafy greens. It turns the smoothie green without making it taste grassy.

Pineapple and apple bring sweetness and acidity, banana a creamy body, and fresh ginger a spicy note that lifts all the fruit. Pineapple is known for its vitamin C, spinach for folate. A refreshing vegan smoothie for the morning or after a workout.

Bartender tips

  • Blend spinach and water first for a few seconds so no leaf pieces remain.
  • Adjust the ginger to taste; young ginger is milder and juicier.

Variations

With lime
Add a squeeze of lime juice for an even fresher version.
