About this smoothie

Flat-leaf parsley is often only used as a garnish, yet it has a fresh, slightly peppery flavour that works well in green drinks. It is a good source of vitamin K. Baby spinach provides a mild base, and fresh ginger adds a clear, warming heat.

Without fruit, this drink is savoury and barely sweet, closer to a green juice than a creamy smoothie. It is best served ice cold in a small glass; a teaspoon of honey rounds it off.

Bartender tips

  • The thin parsley stems are full of flavour and can be blended in.
  • Add half a green apple or a squeeze of lemon if the taste is too grassy for you.

Variations

With apple
Add half a green apple for sweetness and body.
