Method

  1. Halve the avocado, remove the stone and scoop out the flesh.
  2. Wash the baby spinach thoroughly.
  3. Blend avocado, spinach and cold water for about 60 seconds.
  4. Add lemon juice to taste, blend briefly and serve at once.

Taste

Creamy and mild, with a buttery avocado body, a soft green leafiness and a fresh lemon edge; savoury, not sweet.

About this smoothie

Without any fruit, this smoothie sits closer to a cold, drinkable salad than to a fruit shake. Avocado provides the creamy body, baby spinach the colour and a mild leafy flavour, and a few drops of lemon juice keep it fresh.

Avocado supplies mostly monounsaturated fats, and spinach provides folate and vitamin K. Because it contains no fruit sugar, it suits anyone who prefers savoury flavours; a pinch of salt and pepper makes it taste like a light chilled soup.

Bartender tips

  • A pinch of salt, black pepper or a little cucumber turns it into a refreshing savoury drink.
  • For a sweeter version, add a green apple or half a banana.

Variations

Green apple version
Add one cored green apple for fruitiness and a little natural sweetness.

Frequently asked questions

Does it taste sweet?

No. Without fruit it is savoury and mild; add an apple or banana if you want sweetness.

Is it vegan?

Yes, it contains only vegetables, avocado, lemon and water.

Why is the lemon juice optional?

It brightens the flavour and slows browning, but the smoothie works without it.
