Avocado and Arugula Smoothie

Rocket gives this green smoothie a peppery bite that you rarely find in a glass. Avocado makes it silky, and a teaspoon of honey takes the edge off without turning it sweet.

About this smoothie

This is a savoury smoothie rather than a fruity one. Rocket, also called arugula, has a mustardy, peppery flavour, while ripe avocado adds a buttery texture and mostly unsaturated fat. A little honey and an optional squeeze of lemon balance the bitterness of the leaves.

The smoothie is best as a small, refreshing glass at lunchtime or alongside a light meal. If you are new to green drinks, start with the variation below and add more rocket over time.

Bartender tips

  • Chill the water well; savoury green smoothies taste best very cold.
  • The lemon juice keeps the colour bright green for longer.

Variations

Milder
Replace half of the rocket with baby spinach.

Frequently asked questions

Is it vegan?

Not with honey; use maple syrup or agave syrup to make it vegan.

Does it taste sweet?

No, it is mainly savoury and peppery with just a hint of sweetness.

Can I prepare it ahead?

Better not, as avocado browns and the rocket turns bitter.
