Strawberry Parsley Smoothie with Coconut Water

Strawberry and parsley sounds odd until you taste it: the herb makes the berries taste fresher and brighter. Pear adds a soft sweetness in the background.

About this smoothie

Herbs and strawberries are a familiar pairing in the kitchen, usually with basil or mint. Parsley works in a similar way, adding a green, slightly peppery freshness. It is known for its vitamin C and vitamin K content, strawberries for vitamin C as well.

The ripe pear smooths out the texture and sweetens without sugar. Because it uses coconut water, the smoothie is light and refreshing, a nice choice for a summer morning.

Bartender tips

  • Use the thin parsley stems too; they carry plenty of flavour.
  • Start with half the parsley if you are unsure about herbs in smoothies.

Variations

Basil version
Replace the parsley with 5 basil leaves for a sweeter, more aromatic herb note.
