About this smoothie

Flat-leaf parsley has a stronger, more rounded flavour than the curly kind and blends more easily. It is a good source of vitamin K and also contains vitamin C. In a smoothie, a small bunch is enough to add freshness without turning the drink into a salad.

Red apples such as Gala or Pink Lady are sweet enough to balance the herb. Coconut water adds a subtle sweetness and is naturally rich in potassium. Together they make a light drink for mornings or after a workout.

Bartender tips

  • Chill the coconut water beforehand, as the smoothie has no ice or frozen fruit.
  • A squeeze of lemon juice keeps the colour bright green for longer.

Variations

With cucumber
Add a 5 cm piece of cucumber for an even lighter, more refreshing drink.
