About this smoothie

Spirulina is a blue-green microalga sold as a dried powder. It contains protein and iron and has a strong, slightly marine flavour, so a small amount goes a long way. Flat-leaf parsley adds a fresh, peppery herbal note and vitamin C, baby spinach body, folate and vitamin K.

Without fruit, this smoothie is savoury rather than sweet; half an apple is listed as an option to soften it. It is for fans of green drinks, best enjoyed with or before a light meal.

Bartender tips

  • Start with less spirulina; its flavour is strong.
  • A squeeze of lemon brightens the green taste.

Variations

Fruity green
Add half a banana and half an apple for a sweeter, more approachable drink.
