Halve the papaya, scoop out the black seeds, peel and dice the flesh.
Blend spinach, papaya, water and lime juice (plus melted coconut oil if using) for about 45 seconds.

About this smoothie
Papaya has soft, orange flesh with a mild, sweet taste that can seem a little flat on its own. That is why it is traditionally served with lime, which lifts its flavour; we have added a splash here, which the original recipe did not include.
Papaya is known for its vitamin C content and contains the enzyme papain. Baby spinach gives the smoothie a green, slightly olive colour without changing the taste much. Coconut oil is optional. Light and vegan, it works well for breakfast.

A ripe papaya has mostly yellow skin and gives slightly when pressed.
Do not skip the lime; papaya tastes much better with a little acidity.
