Baby Spinach Cucumber Smoothie with Lime

Lime gives this cucumber and spinach smoothie a more aromatic, almost floral sourness than lemon would. It is thin, cold and very refreshing.

Baby Spinach Cucumber Smoothie with Lime

Taste

Light, zesty and cooling, with a perfumed lime sourness and a fresh cucumber note.

About this smoothie

This is the lime version of the spinach and cucumber smoothie. Lime juice has a sharper, more perfumed acidity than lemon and pairs particularly well with cucumber, which tastes cool and mild and consists mostly of water. Baby spinach adds color along with folate and vitamin K, and kiwi brings sweetness and vitamin C.

Without dairy or banana it stays light, more like a green juice with body. That makes it a good choice for hot days or a mid-morning pick-me-up. Adjust the lime to taste, since limes vary a lot in juiciness.

Bartender tips

  • Roll the lime firmly on the counter before cutting; it releases more juice.
  • Add a few mint leaves for an even cooler, mojito-like note (without alcohol).

Variations

With green apple
Add half a green apple for more sweetness and a crisper body.
