This is a green smoothie for people who actually like greens. Three kinds of leaves give it a deep colour and a peppery edge, and a whole red apple keeps it drinkable.

Taste
Fresh and green with peppery rocket, earthy kale and a crisp, sweet apple finish.
About this smoothie
Spinach is mild, rocket peppery and kale robust and slightly bitter, so together they give a layered green flavour. A sweet red apple is the only fruit, which makes this one of the less sweet smoothies in our collection.
Leafy greens are known to provide vitamin K, folate and fibre. Blend thoroughly so the kale becomes completely smooth. The smoothie suits a light breakfast or a green break at lunchtime.
Bartender tips
If it tastes too green, add half a banana or a few frozen pineapple chunks.
A squeeze of lemon lifts the flavour and keeps the colour bright.
Variations
With cucumber
Add 60 g cucumber for a lighter, more refreshing version.
Frequently asked questions
Is it bitter?
Slightly, from the rocket and kale. A sweet apple variety such as Gala helps.
Can I prepare it ahead?
It is best fresh; after a few hours the colour dulls and the taste turns more bitter.
