Method

  1. Wash the baby spinach and let it drain.
  2. Wash, core and quarter the apple; wash, halve and pit the apricots.
  3. Put everything with yoghurt and cold water in the blender.
  4. Blend for about 60 seconds until smooth and serve.

Apricots are at their best from early to late summer. They have a delicate, honeyed sweetness with a gentle tartness near the skin and provide beta carotene, which the body converts into vitamin A. The red apple adds sweetness and fibre, a little baby spinach brings mild greens, and natural yoghurt contributes creaminess, protein and calcium. The yoghurt tang works nicely with the apricot, so the drink tastes a bit like a fruit yoghurt, only lighter. A good breakfast in summer.
