About this smoothie

A smoothie for people who already like green drinks. Kale brings an earthy depth, rocket a mustardy pepper, and baby spinach smooths out the mix. The red apple is the only fruit, so the result is fresh and not very sweet. Leafy greens are good sources of vitamin K and folate.

The original recipe used only rocket and kale; a little baby spinach softens the flavour and fits the name. Drink it cold and fresh, ideally in the morning.

Bartender tips

  • A high speed blender gives the smoothest texture with kale; otherwise blend a little longer.
  • If it tastes too sharp, add half a banana.

Variations

Milder green
Leave out the kale and double the baby spinach.
