Apple Kiwi Smoothie with Kale and Spinach

This one looks the part: deep green, a little frothy, clearly made of leaves. Apple and kiwi keep it juicy and sweet enough that the kale never turns bitter.

Apple Kiwi Smoothie with Kale and Spinach

Taste

Fresh and tangy with a green, slightly earthy note from the kale and a juicy, medium-thin body.

About this smoothie

Kale is the sturdiest leaf you can put in a smoothie. It has a stronger, slightly cabbage-like flavor than spinach, so one leaf per glass is plenty, and the tough central stalk should be cut out. Baby spinach adds volume and a softer green note.

Apple provides sweetness and crisp juice, kiwi a lively acidity and vitamin C. Kale itself is a good source of vitamin K. The combination suits a morning when you want something fresh rather than creamy. A powerful blender helps, as kale fibers can otherwise stay noticeable.

Bartender tips

  • Blending the leaves with the water first prevents stringy bits of kale.
  • If the kale tastes too strong, replace half of it with more spinach.

Variations

Lamb's lettuce version
Swap the kale for lamb's lettuce for a milder, nuttier green smoothie.

Frequently asked questions

Can I use frozen kale?

Yes. Frozen kale is often milder and makes the smoothie colder.

Why does my green smoothie taste bitter?

Usually too much kale or an unripe kiwi. Use less kale or add half a banana.

Is it vegan?

Yes, it contains only fruit, leaves and water.
