Very light and fresh, green and leafy, with a peppery hint and faint sweetness.

About this smoothie

This is one of the lightest smoothies in the collection: mostly leaves and coconut water. Lettuce is mild and watery, baby spinach adds colour, and a little rocket gives a peppery accent. Leafy greens supply folate and vitamin K, chia seeds fibre and plant based omega 3 fatty acids.

The sweetness comes only from coconut water, so half an apple is listed as an option for anyone who wants it fruitier. A refreshing choice on a hot day or with a light lunch.

Bartender tips

  • Use crisp, fresh leaves; wilted salad tastes bitter in a smoothie.
  • A squeeze of lemon lifts the flavour.

Variations

Fruity version
Add half a pear or half a banana for a sweeter, creamier drink.
