About this smoothie

This is the plant based version of the pineapple, banana and date smoothie. Instead of dairy yoghurt it uses coconut yoghurt, which is thick, mildly tangy and adds a subtle coconut aroma that suits pineapple very well.

Dates act as a natural sweetener, their caramel flavour balancing the acidity of the pineapple, which is known for its vitamin C. Remember that dates themselves are rich in natural sugar. With half a banana for body, the smoothie is creamy and satisfying, fine for breakfast or before sport.

Bartender tips

  • Soak hard dates in warm water for 10 minutes before blending.
  • Choose an unsweetened coconut yoghurt; the dates bring enough sweetness.

Variations

With lime
Add a teaspoon of lime juice and some grated lime zest for extra freshness.
