Method

  1. Peel the persimmon and cut it into pieces.
  2. Wash, core and dice the pear.
  3. Rinse the mint and pick the leaves.
  4. Blend everything with the water for about 40 seconds and serve.

Pear and persimmon are both at their best in autumn and blend into a smooth, naturally sweet base. Fresh mint cuts through the sweetness and keeps the drink from tasting heavy. This version uses fresh mint leaves rather than tea, which gives a brighter, more pronounced flavour than our other pear and persimmon smoothies.

Pears provide fibre, persimmons beta-carotene. It suits breakfast or a light afternoon snack.

  • Use Sharon fruit if you cannot find a very soft persimmon.

Replace the mint with lemon balm for a softer, lemony herbal note.
