Method

  1. Wash the persimmon, remove the calyx and cut it into pieces.
  2. Wash the pear half, remove the core and cut it up.
  3. Wash the mint and pick the leaves.
  4. Blend everything with cold water for about 45 seconds and serve.

Thick and honey-sweet, with a velvety persimmon texture, a hint of pear and a cool mint finish.

About this smoothie

Compared with the version that uses a whole pear, this one is more concentrated: the persimmon's honey and apricot flavour comes through clearly, and the texture is almost velvety. Persimmons are rich in beta-carotene, which explains their intense colour.

Half a pear is enough to lighten the texture and add a floral note. Fresh mint keeps the sweetness from becoming heavy. Enjoy it in autumn and winter, when persimmons are in season and good pears are easy to find.

  • If it is too thick, add water in 30 ml steps until it suits you.
  • A little lime juice gives a pleasant acidity if your persimmon is very sweet.
