Pear Persimmon Smoothie with Mint

Pear and persimmon are both at their best in autumn, and together they taste of honey and ripe apricot. Fresh mint keeps all that sweetness bright.

About this smoothie

This version uses a whole pear to match the persimmon, which makes it juicier and a little lighter than the persimmon-led variant. Pears add juice and fibre and have a gentle, floral sweetness that suits the richer persimmon.

Persimmons are rich in beta-carotene and very sweet when ripe, so this smoothie needs no sugar at all. Mint cuts through the sweetness and makes the drink refreshing. Good for breakfast or as an afternoon pick-me-up in autumn and early winter.

Bartender tips

  • Ripe pears that give slightly at the stem blend smoothest and taste sweetest.
  • Chill the fruit beforehand for a cold smoothie without ice.

Variations

With ginger
Add a thin slice of fresh ginger for a warming winter version.
