About this smoothie

Pear and mint are a light, refreshing pairing: the pear brings juicy, honeyed sweetness, the mint a clear coolness. Lamb's lettuce is one of the mildest salad leaves and adds colour, folate and vitamin C without bitterness. Pears contribute fibre, especially when the skin stays on.

This version uses more mint than most recipes, so it tastes distinctly fresh. Adjust to your liking. A good glass for hot days or after a meal.

Bartender tips

  • Start with half the mint and add more after tasting.
  • Wash lamb's lettuce in a bowl of water to remove sand.

Variations

With lime
Add a squeeze of lime juice for a sharper, mojito-like freshness.
