Almonds and apricots are natural partners, and a ripe pear brings them together in a creamy, gently sweet smoothie. Yoghurt adds freshness.

Method

  1. Blend the almonds with the water until very fine.
  2. Wash, core and quarter the pear and pit the apricots.
  3. Add fruit, yoghurt and banana if using and blend for about 45 seconds.
  4. Pour into a jar or glass and serve.

About this smoothie

Apricots and almonds come from closely related trees, and their flavours have a lot in common, which is why they work so well together. Almonds bring unsaturated fats, protein and fibre, apricots a fragrant tartness and carotenoids, and the pear juicy sweetness. The old recipe had no pear despite its name; this version adds it, with banana as an optional extra.

The smoothie is filling enough for breakfast. Blend the almonds with the water first so they break down finely, or use 1 tbsp almond butter instead.

  • Out of season, use dried apricots soaked in warm water.
